Top Dark Chocolate Flavor Liquid Coat 4.000 kg

A Harald specialty developed for quality artisanal ice cream. It keeps all its characteristics in thermal tanks, forming a uniform crust in a few seconds.

Melt the coating between 35 °C and 40 °C in a water bath (water at a 50 °C maximum), keeping the package well closed to avoid contact with humidity. Dry the bucket, open it and mix the coating using a dry spatula. During use, keep the coating between 30 °C and 35 °C. Use a culinary thermometer.
Keep in a cool, dry, ventilated place, away from strong smells. Don’t expose it to light. After opening, keep the lid always on.
Vegetable oil, sugar, cocoa powder, vegetable fat, soy lecithin (INS 322) and polyglycerol polyricinoleate (INS 476) emulsifiers, and nature-identical and artificial flavoring substances.
