Ingredientes

    Dough:

  • 100ml whole milk
  • 80ml Water
  • 2,5g Sugar
  • 75g unsalted butter
  • 100g wheat flour
  • 3 units Eggs
  • 2.5g Salt
  • Stuffing and Covering:

  • 1700g Melken Milk Filling and Topping
  • 595g TOP White

Modo de preparo

1. Bring the milk, water, sugar and butter to a boil. When it boils, add the wheat flour at once and stir until it disgraces from the bottom of the pan. Pour the dough onto a stone and work it until it cools down.2. Transfer the dough to a mixer, beat with the paddle for 1 minute and add the eggs one by one. 3. Transfer to a piping bag and, on a silicone mat, drip the dough into 6 g portions. 4. Bake in preheated oven (180°C) for 20 minutes. 5. Transfer the Melken Milk Flavored Filling and Coverage to a pastry sleeve with a pointed tip, pierce the carolines and insert 20 g of filling into each. 6. To cover, melt the White Chocolate Top Coating in the microwave at medium power (50%), bathe the top of each carolina with 7 g of coating and let it dry. 7. Pack, label and display.
