- 285g Butter without salt
- 75g Refined sugar
- 75g Sifted brown sugar
- 50g Egg
- 500g Flour
- 30g Spice mix
- 40g Cinnamon powder
- 12g Nutmeg powder
- 8g Powdered Clove
- 16g Powdered ginger
- 4g Cardamom powder
- 4g White pepper powder
- 4g Star anise powder
- 500g Melken Milk Chocolate
- 100g White TOP coverage
- 100g TOP Intense Coverage
- Modeling chocolate
- 2g Fat-soluble dye (green and red)

Modo de preparo
Cookie dough
1. In a stand mixer fitted with the paddle/racket attachment, add the butter and sugars. Beat until the mixture is creamy.
2. Add the egg and continue beating until emulsified.
3. Add spice mix and mix well.
4. Add the wheat flour still in the mixer with speed on position 1, just to mix.
5. Remove from mixer, wrap in plastic wrap and refrigerate for 30 minutes.
6. After resting, roll the dough 0.5 cm thick between two plastic sheets and cut the gingerbread man cookies.
7. Place the pre-cut biscuits on a baking sheet and bake at 180°C for 15 to 18 minutes, depending on the size of your mold. The edges should be slightly golden.

1. Melt and season the Melken Milk Chocolate, cover the cookies using a grid and place in the fridge to crystallize for a maximum of 15 minutes.
2. Melt TOP White Coverage and TOP Intense Coverage.
3. With the White TOP Coverage, make the detail of the legs, arms and head and
with the TOP Intense Coverage make the eyes and mouth.
4. With the modeling chocolate already dyed red and green, make the buttons on the body and press with the help of a sanitized screw to make the mark.
